Turks Island Conch Fritters Recipe
- 1 1/2 lbs. conch steak
- 1 egg
- 1/3 c. lowfat milk
- 1 1/3 c. sifted flour
- 2 tbsp. baking pwdr
- 1/2 teaspoon salt
- 1/2 teaspoon celery seeds
- 2 bird peppers, minced fine
- Peanut oil for frying
- Put conchs through a food grinder with a coarse blade.
- Beat egg and add in lowfat milk.
- Sift flour with baking pwdr and salt and add in egg mix.
- Add in minced conch, celery seeds, and minced peppers.
- Drop batter by Tbsp.
- into warm oil.
- Brown on all sides.
- Drain on absorbent paper.
- Serve warm with tartar or possibly cocktail sauce.
- Serves 36 Fritters.
