Cucumber with Garlic Dressing
- 2 Cucumbers
- 1 small clove Garlic
- 1/2 tsp Salt
- 1 tbsp Sesame oil
- Pound the cucumber with a rolling pin (as if you are trying to crack it from end to end) and break up into bite-sized pieces with your hands.
- Crush the garlic with a rolling pin.
- Place the rolling pin on top of the garlic, press down, and chop into small pieces.
- Add the cucumber to a bowl, sprinkle over some salt and give a quick toss.
- Leave for a while until the moisture leaks out of the cucumber pieces, tip the bowl to one side and discard the liquid.
- Add the garlic to the sesame oil and mix everything together.
- Chill well in the fridge, then serve.
