Apricot Bran Scone Recipe
- 2 c. Flour (or possibly 1 c. all-purpose and 1 c. wheat)
- 1/4 c. Sugar
- 4 tsp Baking Pwdr
- 2 c. Bran Flake Cereal
- 4 Tbsp. Butter or possibly Margarine
- 2 x Large eggs
- 1/3 c. Lowfat milk
- 1/2 c. moist-packed Apricots
- In a food processor, whirl together the flour, sugar, baking pwdr, and cereal.
- Drop chunks of butter on top of the dry ingredients, and whirl till the butter is incorporated.
- Lightly beat the Large eggs and stir them in, along with the lowfat milk and fruit.
- Turn out onto a floured board and knead a few times.
- Divide dough into two equal parts, and pat each into a circle.
- Preheat oven to 400-F degrees.
- Place each circle of dough on a greased baking sheet, and cut each into 6 wedges as though you were cutting a pie (but leave them in place).
- Slide the scones into the oven, and bake till lightly browned (check after 15 min).
- When done, allow to cold, then separate the wedges to serve.
