Meatless Meat Balls Recipe
- A 1/2 block of firm tofu
- 1 egg
- A 1/4 c of pine nuts
- 2/3 c of marinated artichoke hearts
- 1/3 c of feta cheese
- 1/3 c of sun dried tomato
- 1/3 c of roasted red bell pepper, chopped
- A 1/2 yellow onion, chopped
- 3 cloves of crushed garlic
- 2 c of bread crumbs
- 1 tbsp of Italian seasoning
- Salt and Pepper to taste
- Blend tofu, egg, pine nuts, artichoke, cheese, tomato and pepper in a food processor until smooth.
- SautA onion with garlic till translucent and add to mixture.
- Add remaining ingredients.
- Form into 1 inch balls.
- Brown in olive oil over medium heat.
- Place in baking dish, cover with spaghetti sauce and bake at 350 for 30 minutes.
