Whole Baked Snapper
- 1 (2 kg) whole boned snapper (head and tail intact)
- 1/2 packet butter
- Coriander
- Dill
- Toasted pine nuts
- Lemon wedges
- Sea salt and pepper
- Slice the butter and lemon.
- Open the fish and season with salt and pepper.
- Put the butter, herbs, lemon and pine nuts inside the fish.
- Fold the fish over to cover the stuffing.
- Place the fish on a tray lined with baking paper and cook for 5 to 10 minutes.
- Place fish onto the platter and pour butter over the fish.
- Spoon Avocado Salad onto the plate.
