Lime Berry Cream Squares
- 1 1/2 cup crushed pretzels
- 1/2 cup Land O Lakes Butter, melted
- 1/4 cup sugar
- 1 (6 ounce) package lime flavored gelatin
- 2 1/2 cups boiling water
- 2 cups vanilla flavored yogurt
- 1 cup Land O Lakes Heavy Whipping Cream*
- 8 cups assorted fresh berries (blackberries, blueberries, raspberries,
- sliced strawberries)
- 2 tablespoons strawberry jelly, warmed**
- 1 cup Land O Lakes Heavy Whipping Cream, whipped
- Heat oven to 350F.
- Combine all crust ingredients in bowl.
- Press onto bottom of ungreased 13x9-inch baking pan.
- Bake 10 minutes; cool completely.
- Combine gelatin and boiling water in bowl.
- Stir until gelatin is dissolved.
- Stir in yogurt using whisk.
- Refrigerate 2 hours.
- Add 1 cup whipping cream to gelatin mixture.
- Beat at medium speed until creamy.
- Pour over cooled crust.
- Refrigerate at least 4 hours or up to 12 hours.
- Combine berries and warm jelly in bowl.
- Cut dessert into squares; place onto individual serving plates.
- Top each serving with about 1/2 cup berry mixture and 2 tablespoons whipped cream.
- *Substitute Land O Lakes Half & Half.
- **Substitute 2 tablespoons red current jelly or other fruit jelly.
