Banana Split Banana Bread
- 1 c. sugar
- 1 large egg or egg substitute
- 1/2 c. unsalted soft butter
- 1 c. mashed ripe bananas
- 3 Tbsp. milk
- 2 c. flour
- 1 Tbsp. vinegar
- 1/2 tsp. baking soda
- 1 c. chocolate chips
- 1/2 c. chopped pecans
- In large bowl cream sugar, egg and butter with electric mixer until fluffy, about 3 minutes.
- Set aside.
- In small bowl, mix bananas and milk (to which I add 1 tablespoon vinegar); set aside. Sift together flour, baking powder and baking soda onto paper plate or bowl.
- Add dry ingredients to creamed butter mixture alternately with banana mixture, stirring with spatula until all dry ingredients are blended, about 1 minute.
- Stir in chocolate chips and pecans.
- Spoon into greased and floured bread pan.
- Drop pan twice from 6-inch height to countertop to remove air bubbles or let rest 20 minutes before putting into oven.
- Preheat oven to 350u0b0. Bake 1 hour.
- Cool in pan 10 minutes before removing to rack to cool.
- Makes 1 loaf.
