Buffalo Chicken Quesadilla
- 1 can (12.5 Oz. Size) Chunk White Chicken, Drained
- 1/2 cups Ranch Dressing
- 1/2 cups Hot Sauce
- 6 Flour Tortillas
- 3 cups Mozzarella Cheese
- Makes 3 quesadillas.
- In a medium bowl, combine chicken, dressing and hot sauce.
- Spray a large skillet with nonstick cooking spray.
- Lay one tortilla on the skillet and top with one third of the chicken mixture.
- Top with 1 cup cheese followed by another flour tortilla.
- Cook on medium heat until bottom is slightly brown and flip to cook the other side.
- Remove from the skillet and let sit to cool.
- Cut in to triangles and serve.
- Notes: For a lighter version, use light Ranch dressing.
