Brunch Pie Recipe
- 3 Tbsp. Butter
- 1 pkt (8-ounce) link sausages
- 6 x Large eggs
- 1/2 c. Half-and-half Salt to taste Pepper to taste
- 1 dsh Chives
- 1/8 tsp Parsley
- 1/4 c. Cooked bacon, crumbled
- 1 c. Monterey Jack cheese
- 1 x 9-inch pie shell, baked
- Fry sausages, slice and set aside.
- Heat butter in a large skillet.
- Meanwhile, combine all other ingredients (except the cheese) in a bowl and whip with a wire whisk.
- Pour into the skillet and cook on low heat, stirring with a fork till the Large eggs are cooked, but still soft.
- Pour the mix into a 9-inch pie shell.
- Place sausages on top of the egg mix, top with cheese, and place under the broiler till the cheese is melted, about 3-4 min.
