Spiced Apple Wedges with Caramel Sauce and Vanilla Ice Cream

  1. Preheat oven to 400F.
  2. Finely grind first 4 ingredients in spice mill or small coffee grinder.
  3. Place apples in 13 x 9 x 2-inch glass baking dish.
  4. Sprinkle spices over apples.
  5. Add 1/4 cup sugar, 1/4 cup cider and butter.
  6. Gently stir to coat apples.
  7. Bake apples until tender, stirring occasionally, about 40 minutes.
  8. Cool 10 minutes.
  9. Reduce oven temperature to 300F.
  10. Using slotted spoon, transfer apples to ovenproof bowl and set in oven.
  11. Scrape all juices from baking dish into medium saucepan.
  12. Mix in cream and remaining 1/4 cup sugar and 1/4 cup cider.
  13. Boil until caramel sauce deepens in color and is reduced to 1/2 cup, whisking occasionally, about 5 minutes.
  14. Serve apples with ice cream and sauce.
