Berry Cream Soda
- 2 cups water
- 1 cup sugar
- 1 12 cups berries
- 1 cup cold milk
- ice cube
- 3 cups seltzer water
- Make a simple syrup by combining the sugar and water in a small pot over medium high heat.
- whisk occasionally to help dissolve the sugar.
- Bring to a boil and take it off the heat to cool, just for 10 or 15 minutes.
- You want the simple syrup to be just a bit warm when the fruit is added to it.
- You will only need about 1 3/4c syrup for the recipe, keep the rest stored in your fridge for another use.
- Add the berries to the pot with the warm syrup and stir.
- With a slotted spoon transfer the fruit to a blender or food processor.
- Add 3 tablespoon of the syrup and blend until smooth.
- Pour the puree into a medium strainer or sieve set over a bowl and press the juice through with the back of a spoon.
- You will have about 3/4 c of puree.
- Refrigerate until you are ready to make the drinks.
- For each drink combine 3 tablespoons of the puree with 1/4 cup of milk in a tall glass, either shaker in a cocktail shaker or stirring with a spoon.
- Add the ice cubes, pour in 3/4 cup seltzer, and shake or stir until frothy.
- Serve cold.
