Berry Cream Soda

  1. Make a simple syrup by combining the sugar and water in a small pot over medium high heat.
  2. whisk occasionally to help dissolve the sugar.
  3. Bring to a boil and take it off the heat to cool, just for 10 or 15 minutes.
  4. You want the simple syrup to be just a bit warm when the fruit is added to it.
  5. You will only need about 1 3/4c syrup for the recipe, keep the rest stored in your fridge for another use.
  6. Add the berries to the pot with the warm syrup and stir.
  7. With a slotted spoon transfer the fruit to a blender or food processor.
  8. Add 3 tablespoon of the syrup and blend until smooth.
  9. Pour the puree into a medium strainer or sieve set over a bowl and press the juice through with the back of a spoon.
  10. You will have about 3/4 c of puree.
  11. Refrigerate until you are ready to make the drinks.
  12. For each drink combine 3 tablespoons of the puree with 1/4 cup of milk in a tall glass, either shaker in a cocktail shaker or stirring with a spoon.
  13. Add the ice cubes, pour in 3/4 cup seltzer, and shake or stir until frothy.
  14. Serve cold.
