Cracked Canoe Battered Cod Fritters
- 12 lb cod, filets cut into small strips
- 1 tablespoon olive oil
- 3 tablespoons all-purpose flour
- 14 cup all-purpose flour
- 14 cup cornstarch
- 12 cup cracked canoe lager beer
- 1 teaspoon kosher salt
- oil (for frying)
- Toss the cod strips with the olive oil and a sprinkle of kosher salt.
- Chill and reserve.
- In a pot, place enough oil to fry the fritters, heat to 325F using a deep frying thermometer.
- In a medium bowl, add the 1/4 cup flour, cornstarch, Cracked Canoe lager, 1 teaspoons kosher salt, and mix with your hands until a smooth batter is formed.
- Adjust the consistency with some more beer if needed.
- Toss the cod strips in the 3 tablespoons of flour, then dredge each piece in the batter and fry until golden brown.
- Place on a paper towel, then serve with your favorite tartar sauce and slices of lemon or malt vinegar.
