Mandarin Coffee Cake Recipe

  1. Drain mandarin oranges, reserving 1/3 c. syrup and 2/3 c. of the orange sections.
  2. Dice the remaining orange sections.
  3. Combine the 2 c. biscuit mix, 2 Tbsp.
  4. brown sugar and orange peel.
  5. Combine egg, lowfat milk and the reserved orange syrup.
  6. Add in to the biscuit mix, with raisins and diced orange sections.
  7. Stir till moistened.
  8. Pour into 9 inch round pan.
  9. Combine the 1/4 c. biscuit mix, the 1/4 c. brown sugar and the cinnamon.
  10. Cut in butter.
  11. Sprinkle atop batter.
  12. Slice pears in thirds.
  13. Arrange atop with reserved oranges.
  14. Bake in 400 degree oven for 25 min.
