Mandarin Coffee Cake Recipe
- 1 (11 ounce.) can mandarin oranges
- 2 c. biscuit mix
- 2 tbsp. brown sugar
- 1/2 teaspoon grated orange peel
- 1 beaten egg
- 1/3 c. lowfat milk
- 1/2 c. raisins
- 1/4 c. biscuit mix
- 1/4 c. brown sugar
- 1/4 teaspoon cinnamon
- 2 tbsp. butter
- 1 (8 1/2 ounce.) can pear halves, liquid removed
- Drain mandarin oranges, reserving 1/3 c. syrup and 2/3 c. of the orange sections.
- Dice the remaining orange sections.
- Combine the 2 c. biscuit mix, 2 Tbsp.
- brown sugar and orange peel.
- Combine egg, lowfat milk and the reserved orange syrup.
- Add in to the biscuit mix, with raisins and diced orange sections.
- Stir till moistened.
- Pour into 9 inch round pan.
- Combine the 1/4 c. biscuit mix, the 1/4 c. brown sugar and the cinnamon.
- Cut in butter.
- Sprinkle atop batter.
- Slice pears in thirds.
- Arrange atop with reserved oranges.
- Bake in 400 degree oven for 25 min.
