Coach Quinn's Potato Salad
- 8 medium potatoes
- 3 eggs
- Miracle Whip
- milk
- butter
- salt
- fresh ground pepper
- paprika
- Peel and boil the potatoes.
- Hard boil the eggs.
- When the eggs are done, put in cold water to cool.
- This will make the shells easier to come off.
- When the potatoes are soft, add a little bit of milk and dollops of butter.
- Add milk to make the potatoes the consistency you like.
- Don't be afraid to use your hands to mix and test the consistency.
- Let the potato mix cool.
- Cut up the eggs, adding a bit of butter as well as salt and pepper.
- Once potatoes are cool, add mashed eggs, leaving some of the cut up eggs side to put on top of the salad.
- Add Miracle Whip to taste.
- When you think you have enough, add at least 2 more heapng spoonfuls.
- Mix well, add salt and pepper and freshly ground pepper.
- When salad is mixed put a skim of Miracle Whip across the top, add cut up chunks of the remaining egg and garrnish with paprika.
- Cool in refrigerator before serving.
