Mexico Mexican Wedding Cookies Recipe

  1. Cream together butter and sugar till light.
  2. Add in flour, pecans and vanilla.
  3. Roll dough into 1 inch balls.
  4. Place on greased baking sheet and flatten slightly.
  5. Bake at 300 degrees for 25-30 min.
  6. Roll in additional confectioners' sugar while hot.
  7. Let cold, roll again in sugar.
  8. Be careful to bake only till a light brown color.
  9. Cookies may be stored for several days with a light dusting of XXX sugar before serving.
