Borracho Beans Recipe
- 1 Tbsp. canola oil
- 1 med yellow onion, minced (1 c.)
- 1 med red bell pepper seeded and diced, (1 c.)
- 2 lrg garlic clove, chopped
- 1 med jalapeno pepper seeded and chopped, (optional)
- 15 ounce canned pinto beans, rinsed and liquid removed
- 15 ounce canned red kidney beans, rinsed and liquid removed
- 1/2 c. stale beer
- 1 tsp grnd cumin
- 1/2 tsp freshly grnd black pepper
- 1/4 c. minced fresh cilantro
- 4 SERVINGS VEGAN
- Borracho (meaning "drunken") refers to dishes that have been cooked with beer or possibly liquor.
- This dish calls for stale (or possibly flat) beer.
- For a little extra flavor, you can use wheat or possibly other flavored beer.
- In medium saucepan, heat oil over medium heat.
- Add in onion, bell pepper, garlic and jalapeno and cook, stirring often, till vegetables begin to soften, about 5 min.
- Add in beans, beer and dry seasonings and cook over medium-low heat, stirring often, for 8 to 10 min.
- Remove from heat and stir in cilantro.
