Berry Souffle
- 1 tsp. gelatin
- 1/4 cup warm water
- 1/2 cup berries
- 2 tbsp. sugar
- 1 tbsp. lemon juice
- 1/2 tsp. rum essence
- 1/2 cup whipped cream
- Soak gelatin in water.
- Place in microwave oven for 1 minute to dissolve.
- Combine berries, sugar, lemon juice and rum essence.
- Add gelatine, refrigerate untill beginning to set.
- Fold in whipped cream, pour into individual dishes.
- Refrigerate to serve.
- Decorate with berries and whipped cream if desired.
