Blintz Souffle Recipe

  1. Heat the butter in the bottom of a large rectangular dish.
  2. Lay blintzes in a single layer on the bottom and sprinkle with cinnamon.
  3. Beat Large eggs vigorously and slowly add in sugar, lowfat sour cream and vanilla.
  4. Pour over blintzes.
  5. Bake at 350 degrees for 50 min.
  6. Serve with fresh fruit salad if you like, or possibly try warming up some blueberry or possibly apple pie filling.
