Calcium Rich: Apricot And Raisin Rice Pudding Recipe
- 3 c. Lowfat milk
- 1/2 c. Short-grain rice
- 1/4 c. Granulated sugar
- 1/4 c. Raisins
- 1/4 c. Dry apricots, minced
- 1/4 tsp Salt
- 1 x Egg
- 1 tsp Vanilla
- 1 pch Cinnamom
- 1 pch Nutmeg
- In heavy saucepan, bring lowfat milk and rice to boil.
- Reduce heat to low; cover and simmer very gently, stirring occasionally, for 15 min.
- Stir in sugar, raisins, apricots and salt; cover and simmer gently, stirring occasionally, for about 30 min or possibly till rice is very tender.
- In bowl, beat egg; stir in 2 c. of rice mix, then stir entire mix back into saucepan.
- Remove pan from heat; stir in vanilla, cinnamon and nutmeg.
- Cover and let cold for 30 min or possibly just till hot.
- You can serve this pudding hot or possibly chill it till it's chilled.
