Warm Radicchio Cheese Puddles
- 2 teaspoons olive oil, extra-virgin
- 2 teaspoons lemon juice
- 6 large radicchio rinsed and dried
- 3 ounces monterey jack cheese cut into 1/4 inch thick slices
- 1 x black pepper freshly ground
- Mix oil and lemon juice; brush mixture all over radicchio leaves.
- Set leaves, cut side up, in a 9x13 inch baking dish.
- Place an equal portion of the cheese in each radicchio cup.
- Sprinkle with pepper.
- Bake in a 350F (180C) F oven just until the cheese melts, 4 to 6 minutes.
- Serve hot or warm.
