Green Peas Creole Recipe
- 1 pkg. frzn green peas
- 2/3 c. minced onion
- 1 (3 ounce.) can sliced mushrooms, liquid removed
- 1 (4 ounce.) jar pimentos, liquid removed and diced
- 1/3 teaspoon Worcestershire
- 1/4 c. butter
- 2/3 c. minced celery
- 2/3 c. minced green pepper
- 2 hard boiled Large eggs, minced
- 1 can condensed tomato soup
- 2/3 c. cracker crumbs, Saltine or possibly Ritz
- Heat butter in skillet, saute/fry green pepper, onion and celery for 10 min.
- Turn into mixing bowl, add in peas, mushrooms, pimento, and Large eggs.
- Toss lightly.
- Add in soup, Worcestershire sauce, salt and pepper to taste.
- Mix well and pour into greased 1 1/2 qt casserole.
- Sprinkle with crumbs and bake in preheated 350 degree oven for about 40 min.
- Serves 6-8.
