Mexican Fruit Salad
- 1 cup beet, cooked and sliced
- 1 cup banana, sliced
- 2 medium oranges, peeled and sliced
- 2 medium apples, cored and sliced
- 1 cup pineapple, cubed
- lettuce leaf
- 12 cup pecan halves
- 14 cup dark rum (80 proof)
- 14 cup lemon juice
- 14 cup honey
- On serving platter, arrange beets and fruits on letuce leaves in decorative pattern.
- Top with nuts.
- Blend rum, lemon juice, and honey.
- Pour over salad.
