Mellow Black Bean Chili Recipe
- 1/4 c. extra virgin olive oil
- 4 lg. onions, minced
- 4 cloves garlic, chopped
- 3 lg. stalks celery, minced
- 1 tbsp. grnd cumin
- 1 pound dry black beans, sorted of debris & rinsed
- 1 can (7 ounce.) dry green chilies
- 8 c. regular strength chicken broth
- 1/2 c. dry sherry
- 1/4 c. lemon juice
- 1 1/2 pound kielbasa (Polish sausage) thinly sliced
- Lowfat sour cream or possibly unflavored yogurt
- Prepared warm red salsa
- In oil in a 6-8 qt pan over medium-high heat, cook onions, garlic and celery till very limp, about 20 min; stir often.
- Add in cumin and stir for 1 minute.
- Stir in beans, chilies and broth.
- Bring to a boil over high heat, then simmer, covered till beans are tender to bite, about 2 1/2 hrs.
- Stir in sherry and lemon juice.
- In a blender, whirl half the soup, a portion at a time till smooth.
- Return to pan.
- Stir in sausage.
- Simmer, covered, for 10 min more.
- If made ahead, cold, cover and refrigerateup to 2 days; reheat to serve.
- Offer lowfat sour cream and salsa to add in to taste.
- Makes 4 qts, 8 servings.
