My Pear Crisp
- 3 pears, ripe
- 13 cup dried apricots, chopped or 13 cup raisins
- 14 teaspoon cinnamon
- 2 tablespoons sugar substitute or 14 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon vanilla extract
- 14 cup water
- 12 cup quick oats
- 12 cup Fiber One cereal
- 1 tablespoon light butter
- 14 teaspoon cinnamon
- 1 tablespoon sugar substitute or 1 tablespoon brown sugar, equivalent
- vanilla ice cream (optional)
- whipped cream (optional)
- cinnamon (optional)
- Preaheat oven or toaster oven to 375*F.
- Mix cornstarch, sugar, cinnamon, and water in a small bowl.
- Stir to combine.
- Chop pears, remove the insides, combine with apricots.
- Spray a pan with cooking spray and add pear mixture.
- Stir in cornstarch mixture.
- Cook a few minutes, stirring constantly until the the whole thing gets thick and the fruit is tender.
- Spray a pie dish with cooking spray, add the fruit from the pan and set aside.
- Melt butter in the microwave.
- Stir in sugar and cinnamon.
- Combine oats and cereal and stir in butter mixture.
- Stir to combine.
- Spread mixture on top of the fruit in pie dish and put into oven.
- Bake until topping begins to brown/get crispy.
- Serve warm or cold.
- Top with vanilla ice cream or whipped cream if you desire and sprinkle with the extra cinnamon.
