Zucchini Wambini
- 2 medium zucchini
- 1 medium onion
- 5 large button mushrooms
- 1 large tomatoes, peeled
- 2 sticks mozzarella string cheese
- 14 teaspoon salt
- 14 teaspoon pepper
- 14 teaspoon cayenne pepper
- 14 teaspoon garlic powder
- nonstick cooking spray
- Peel the zucchini, leaving alternating strips of the skin on.
- Cut the zucchini, onion, mushrooms, tomato and the string cheese into large bite-sized pieces.
- Coat a frying pan with the non-stick cooking spray and place on high heat.
- Cook the zucchini and the onion until lightly brown and tender-crisp.
- Add the mushrooms and continue cooking until they're warmed through.
- Stir often.
- Crush the tomato pieces into the pan and heat until hot and juicy.
- Add the salt, pepper, cayenne pepper, and garlic powder during the last minute of cooking.
- Remove from heat and stir in the string cheese.
