Chipotle Cheese Grits
- 3 cups water
- 34 cup quick-cooking grits
- 14 teaspoon salt
- 1 cup shredded extra-sharp cheddar cheese
- 1 chipotle chile in adobo, mashed
- Bring water to a boil in a medium pan; stir in grits and salt.
- Cover and cook on reduced heat, simmer for 5 minutes, stirring twice.
- Remove from heat; stir in cheese and grits.
