Watermelon and Pineapple Salad W/Jalapeno Syrup

  1. To make the jalapeno syrup, stir the lime juice, sugar and water in a small pan over medium-low heat, without boiling, until the sugar has completely dissolved.
  2. Bring to the boil, then lower to a simmer.
  3. Continue to simmer for 10 to 15 minutes, without stirring, or until thick and syrupy.
  4. Add the jalapeno; cook for 5 minutes.
  5. Allow to cool to room temperature.
  6. Arrange the fruit on individual plates and drizzle with the syrup.
  7. Garnish with mint leaves and fresh jalapeno slices.
  8. Serve chilled.
