Stealth Zucchini Dinner (shh..please dont tell my kids)
- 3 whole Zucchini, Shredded
- 1 pound Ground Beef
- 2 cloves Garlic, Minced
- 2 cups Pasta Sauce
- 1/2 teaspoons Dried Basil
- 1/2 teaspoons Dried Oregano
- 2 cups Fat Free Cottage Cheese
- 1 Tablespoon Dried Parsley
- 2 whole Eggs, Beaten
- 1 cup Dry Seasoned Breadcrumbs, Divided
- 2 cups Shredded Mozzarella Cheese, Divided
- Preheat oven to 350.
- Shred zucchini, place in a colander to drain.
- Brown beef and garlic.
- Drain beef.
- Stir in pasta sauce, basil, and oregano.
- Cook 1 minute.
- Remove from heat.
- Combine cottage cheese, parsley, and eggs in a medium bowl.
- Squeeze out excess liquid from zucchini.
- Spray a 9x13 baking dish with non-stick spray.
- Cover the bottom of the dish with a thin layer of zucchini.
- Sprinkle with half of the breadcrumbs.
- Spread half of the cottage cheese mixture on top.
- Cover with half the meat mixture and 1 cup of mozzarella.
- Repeat layers except for mozzarella.
- Place in a 350 degree oven.
- During the last 5 minutes of cooking sprinkle the remaining mozzarella on top.
