Slightly Spicy Chicken
- 2 Tablespoons Extra-Virgin Olive Oil
- 1 cup Onion, Thinly Sliced
- 1 Tablespoon Red Chili Flakes
- 2 Tablespoons Fresh Basil, Finely Chopped
- 2 cloves Garlic, Minced
- 1- 1/2 teaspoon Salt
- 2 cans Diced Tomatoes, Drained (or Dice Up 2-3 Fresh Tomatoes)
- 2 cups White Mushrooms, Sliced
- 1 package Frozen Spinach, Thawed
- 1- 1/2 cup Cooked Chicken, Cubed
- 1 pound Thin Spaghetti
- 1 cup Or More Freshly Grated Parmesan Cheese
- Heat EVOO in large skillet over medium high heat.
- Add onion, garlic, chili flakes, basil and salt; saute until onion is soft.
- Add tomatoes, mushrooms and spinach.
- Cook until mushrooms are soft but not mushy.
- Add chicken and heat through.
- While mixture is heating, cook pasta to al dente.
- Serve chicken mixture over pasta with Parmesan cheese.
