21 Club Rice Pudding Recipe

  1. In a heavy saucepan, mix together lowfat milk, cream, salt, split vanilla bean and 1/2 of the sugar and bring to a boil.
  2. Reduce heat.
  3. Stir in the rice and simmer, covered, over very low heat for 1 1/2 hrs till Rice becomes tender.
  4. allow to cold and remove the vanilla bean.
  5. stir in remaining sugar and the yolk of one egg.
  6. Stir in whipped cream, reserving two Tbsp.. scoop pudding into individual ovenproof serving dishes or possibly one large souffl
