Pozole (Pork and Hominy Soup)

  1. Cut pork loin into 3-inch cubes.
  2. Season with salt and boil until tender.
  3. Add drained hominy and cook until boiling.
  4. In a saucepan, boil dried chile peppers for 2 to 3 minutes until soft.
  5. Combine chile peppers, garlic and more salt to taste.
  6. Liquify in a blender.
  7. Strain chile mixture and dump left over seeds add to pot.
  8. Allow to boil for about 1 hour.
  9. When done serve hot with toppings of choice.
