Shrimp & Okra Gumbo Recipe
- 4 tbsp. oil
- 4 tbsp. flour
- 2 lbs. okra, sliced
- 2 cans tomatoes, cut up
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 1/4 c. minced parsley
- 1/4 teaspoon thyme
- 1 tbsp. basil
- 1/2 teaspoon Worcestershire sauce
- 2 lbs. shrimp, peeled
- 2 quarts. water
- Salt & pepper to taste
- Make a good dark roux in a heavy pot with warm oil and flour.
- Add in water slowly and then okra.
- Add in all vegetables and seasoning.
- Cook above ingredients for 30 min to an hour.
- Add in shrimp but don't over cook.
- File is not added because okra is a thickener.
- Gumbo should have thick consistency, somewhere between soup and gravy.
- Serve with rice in bowl.
