Cheesy Squash Casserole

  1. Thinly slice the 2 lbs of squash
  2. Cook the squash and onions in a small amount lightly salted boiling water for 10 to 12 minutes or until veggies are tender.
  3. Drain and set aside.
  4. Preheat oven to 350F
  5. Melt butter in a medium saucepan over medium heat.
  6. Once butter is melted, add flour.
  7. Stir occasionally for 1 minute.
  8. Warm milk for about 1 minute in microwave.
  9. Gradually add warmed milk to butter/flour mixture.
  10. Stir constantly, until mixture is thickened and bubbly.
  11. Remove mixture from heat.
  12. Add 1 1/2 cups cheese, salt, pepper, and cayenne.
  13. Stir until cheese melts completely.
  14. Add squash.
  15. Stir well.
  16. Spoon squash mixture into a shallow baking dish lightly coated with cooking spray.
  17. In a small bowl gently crush ritz crackers and combine with additional 1/2 cup of cheese.
  18. Evenly coat squash with cracker mixture.
  19. Bake at 350F for 20 - 25 minutes or until cheese is melted.
  20. Enjoy!
