Cheesy Squash Casserole
- 2 lb Yellow squash
- 1/3 large white onion halved & thin sliced
- 1 tbsp Butter
- 2 tbsp All purpose flour
- 1 cup Milk
- 2 cup Kraft Shredded Triple Cheddar Cheese
- 1/2 tsp Salt
- 1/4 tsp Ground black pepper
- 1/4 tsp Cayenne pepper
- 1 packages Buttered ritz crackers
- 1 Cooking spray
- Thinly slice the 2 lbs of squash
- Cook the squash and onions in a small amount lightly salted boiling water for 10 to 12 minutes or until veggies are tender.
- Drain and set aside.
- Preheat oven to 350F
- Melt butter in a medium saucepan over medium heat.
- Once butter is melted, add flour.
- Stir occasionally for 1 minute.
- Warm milk for about 1 minute in microwave.
- Gradually add warmed milk to butter/flour mixture.
- Stir constantly, until mixture is thickened and bubbly.
- Remove mixture from heat.
- Add 1 1/2 cups cheese, salt, pepper, and cayenne.
- Stir until cheese melts completely.
- Add squash.
- Stir well.
- Spoon squash mixture into a shallow baking dish lightly coated with cooking spray.
- In a small bowl gently crush ritz crackers and combine with additional 1/2 cup of cheese.
- Evenly coat squash with cracker mixture.
- Bake at 350F for 20 - 25 minutes or until cheese is melted.
- Enjoy!
