Potato Salad with Egg and Mint

  1. Cook potatoes in boiling water until tender, drain, cool.
  2. Combine potatoes, eggs and spring onions.
  3. Mix together the mayonnaise, mint, salt and pepper.
  4. Toss well and chill.
  5. Serve garnished with mint leaves.
