Chicken Risotto
- 2 tablespoons oil
- 1 clove garlic, crushed
- 1 onion, finely chopped
- 200g chicken thigh fillets, finely chopped Whole Foods 1 lb For $3.99 thru 02/09
- 1 cup grated sweet potato (1 small sweet potato) Safeway 2 pkg For $5.00 thru 02/09
- 3 cups cooked rice
- 1/2 cup grated KRAFT* Cheddar Cheese
- 2 tablespoons chopped fresh herbs
- Heat oil in a large saucepan, add garlic, onion and cook until onion is soft.
- Add chicken and sweet potato, cook over a medium heat for 5 minutes or until chicken is golden brown.
- Stir in cooked rice over heat until warmed through.
- Add cheese and herbs and stir until cheese melts.
