Chicken Risotto

  1. Heat oil in a large saucepan, add garlic, onion and cook until onion is soft.
  2. Add chicken and sweet potato, cook over a medium heat for 5 minutes or until chicken is golden brown.
  3. Stir in cooked rice over heat until warmed through.
  4. Add cheese and herbs and stir until cheese melts.
