Marinated Pork Kabobs
- 2 cups plain yogurt
- 2 tbsp. lemon juice
- 4 cloves garlic, minced
- 1/2 tsp. ground cumin
- 1/4 tsp. ground coriander
- 2 lb. pork tenderloin, cut into 1-inch pieces
- 8 sm. white onions, halved
- 8 cherry tomatoes
- 1 md. sweet red peppers, cut in 1-1/2-inch pieces
- 1 md. green pepper, cut in 1-1/2-inch pieces
- In a medium glass bowl, combine yogurt, lemon juice, garlic, cumin and coriander; mix well.
- Add pork; cover and refrigerate for 6 hours or overnight.
- Alternate pork, onions, tomatoes and peppers on eight skewers.
- Grill over medium coals for about 30-35 minutes or until meat reaches desired doneness.
