Chef Kimos' Rack of Lamb

  1. Place slivers of garlic along the bones and the base of the rack.
  2. Salt and pepper all over.
  3. Heat small amount of oil in a skillet to very hot and quickly brown meaty top side of rack only.
  4. Don't allow it to cook or burn.
  5. Place rack in a baking dish.
  6. While oven is preheating to 350 to 375F (190C) F, make sauce.
  7. SAUCE: Heat to just below boiling point while stirring constantly.
  8. Use to baste rack and as a sauce to serve with it.
  9. I usually doubled the recipe to have enough.
  10. Place baking dish on center rack of preheated oven.
  11. Pour 1/2 of the sauce over rack of lamb.
  12. Cook for about 20+ minutes but usually not more than 25 minutes per pound.
  13. Serve and accept the ovations from family and friends.
