Banana Bread

  1. Prepare ahead: Will keep for up to 1 week in an airtight container.
  2. Preheat the oven to 350F (180C).
  3. Butter the loaf pan and line the bottom with wax paper.
  4. Sift the flour and baking powder together into a bowl.
  5. Add the butter and use your fingertips to rub it in until the mixture resembles bread crumbs.
  6. Stir in the sugar.
  7. Mash the bananas with a fork'you should have 1 cup.
  8. Add the bananas, yogurt, and eggs to the flour mixture and stir until combined.
  9. Stir in the walnuts.
  10. Spread in the pan.
  11. Bake for 1 1/4 hours, or until a wooden toothpick inserted in the center comes out clean.
  12. Transfer to a wire cake rack and let cool 5 minutes.
  13. Invert onto the rack, remove the paper, and cool completely.
