Cinnamon Streusel Coffee Cake

  1. Preheat oven to 350AF.
  2. Coat a 13A9a3 baking dish with cooking spray.
  3. In a large mixing bowl, combine the oat flour, whole wheat flour, whey protein, Splenda, baking powder, baking soda, and salt; stir to blend.
  4. In a separate mixing bowl, combine yogurt, eggs, applesauce, oil and water.
  5. Stir until smooth.
  6. Add wet ingredients to bowl containing dry ingredients; stir to blend just until uniformly moistened.
  7. Spread evenly in pan.
  8. In a small bowl, stir together cinnamon, brown sugar, vanilla extract, rum extract, and salt.
  9. Add oats and stir to blend.
  10. Add butter and rub in with fingers until mixture is moist crumbs.
  11. Sprinkle evenly over batter, and use the handle of a wooden spoon to poke some of the streusel into the batter.
  12. (Poke it about 20-30 times).
  13. Bake 25 minutes; allow to cool before cutting into 12 pieces.
  14. Wrap individually in plastic wrap and store in refrigerator or freezer.
