Potato Salad
- 3 baked potatoes
- 3 green scallions, chopped
- 2 tablespoons sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- Salt
- Pepper
- 1 teaspoon white vinegar
- Peel potatoes and cut into 1-inch chunks.
- Mix with scallions in a serving bowl.
- In a separate bowl combine sour cream, mayonnaise, mustard, salt, pepper and vinegar.
- Pour dressing over potatoes and toss to coat
