Mama Zuquinis Linguine Caprese

  1. Bring a large pot of water to a boil.
  2. Place oil and garlic in large skillet; cook over medium-high heat for 30 seconds or until it begins to sizzle.
  3. Add tomatoes and crushed red pepper; cook, stirring occasionally, until the tomatoes begin to juice up.
  4. Reduce heat to low; cook, stirring occasionally, until sauce thickens.
  5. Set aside.
  6. Prepare pasta according to package directions.
  7. Drain and toss with tomato mixture.
  8. Stir in cheese and basil; toss to coat.
  9. Season with salt and pepper.
