Watermelon, Honeydew, and Cantaloupe Granitas

  1. In a small saucepan, combine the sugar, 1/4 cup water (use an extra 1/4 cup water for honeydew and cantaloupe) and salt and bring to a boil.
  2. Reduce heat and simmer (do not stir) until the sugar dissolves, 2 to 3 minutes.
  3. Remove from heat, add the herbs, and let cool completely, then strain into a small bowl.
  4. In a blender, puree the cooled syrup and 5 cups melon until smooth.
  5. Strain into a metal loaf or square pan, cover, and freeze until set, about 3 hours.
  6. When ready to serve, using a fork, scrape the surface of the melon ice to create large flakes.
  7. Transfer to glasses and serve with additional fruit, if desired.
