Quick Mackerel Nanban without Deep-Frying

  1. Sprinkle the mackerel with salt (not listed in the ingredients), let sit for 5 minutes, rinse under cold water, then thoroughly blot off excess moisture with a paper towel.
  2. Season with salt and pepper, then coat in flour.
  3. Remove the seeds from the red bell pepper, thinly slice lengthwise, then microwave (800 W) for 1 minute.
  4. Thinly slice the onion and julienne the carrot.
  5. In a bowl, combine the ingredients and add the vegetables from Step 2.
  6. In a frying pan, heat the olive oil over medium heat.
  7. Arrange the mackerel in the pan, cover with a lid, then fry both sides until golden brown.
  8. Transfer the fish to a serving dish, pour the sauce over it, then serve.
