Pumpkin Spice Pancakes
- 2 13 cups pancake mix
- 2 tablespoons sugar
- 1 teaspoon pumpkin pie spice
- 2 eggs
- 12 cup canned pumpkin
- 2 tablespoons canola oil
- 8 ounces whipped topping, thawed (1/2 tub)
- 1 tablespoon sugar
- 12 teaspoon vanilla
- 12 teaspoon ground nutmeg
- Heat griddle and prepare with cooking spray.
- In a bowl, combine pancake mix, sugar and pumpkin pie spice.
- In a separate bowl, beat together eggs, water, pumpkin and oil until smooth.
- Whisk together the pancake mixture and the pumpkin mixture until moistened.
- Pour 1/4 cup batter per pancake onto hot griddle.
- Cook 1-2 minutes per side until golden brown.
- In a bowl, combine whipped topping, sugar, vanilla and nutmeg.
- Do not over mix.
- Serve hot pancakes with the whipped topping.
