Somen Noodle Stir Fry with Mackerel and Miso

  1. Remove the bones from the mackerel and chop it along with the ginger until it's finely minced.
  2. Season with salt.
  3. Heat sesame oil in a frying pan and cook the onion and minced mackerel.
  4. When everything is cooked through, add the sake, mirin, miso, sugar and soy sauce, and simmer until the liquid is nearly gone.
  5. While the fish is cooking, boil the somen noodles.
  6. Rinse with water and drain well.
  7. Add the somen into the pan along with some more sesame oil.
  8. Stir fry on high but do not over mix or the somen will get too soft and sticky.
  9. Season a beaten egg with salt & pepper and pour over the noodles.
  10. Turn off heat and let the egg slowly cook as the pan cools down.
  11. Once the egg is cooked through, mix lightly.
  12. Season with shichimi pepper if you like.
