Roasted Pepper and Tomato Saute
- 4 bell peppers, roasted and cut in strips
- 13 cup olive oil
- 12 onion, thinly sliced
- 4 garlic cloves, sliced
- 2 tomatoes, peeled seeded and chopped
- fresh hot chili pepper, minced
- In skillet, heat oil.
- Add onion and saute 5 minutes.
- Add garlic and cook until onion starts to brown.
- Add tomatoes and cook until softened, 5 minutes.
- Stir in bell peppers.
- Add chile pepper and salt to taste.
- Reduce heat to low and cook, stirring until peppers are heated through.
