Friday Fish Tacos

  1. In a large high-sided skillet add butter, lemon juice and oil and heat over medium-high heat.
  2. Swirl the pan to make sure the oil mixture covers the skillet.
  3. Add fish fillets.
  4. Allow them to cook about a minute.
  5. Add the first tablespoon of taco seasoning to the top side, covering both fillets.
  6. Flip the fillets and add the second tablespoon of taco seasoning covering the other side of each.
  7. Allow the fish to cook for another minute or two until cooked through and flaky, eventually breaking the fish up into small pieces as it cooks.
  8. Once fish is cooked through, add it to the taco shell.
  9. Taco it up with all of your favorite taco toppings.
  10. Enjoy!!
