Courgette Tarte

  1. I used a ready made pastry case cos I can't make good pastry!
  2. But if making ur own, roll out and shape the pastry in a shallow pie dish and blind bake then set aside to cool.
  3. Thinly slice the courgette, garlic and onion.
  4. Lightly fry in a bit of olive oil then pat dry and set aside.
  5. Beat the egg in a jug and season with the salt and pepper.
  6. Layer the courgette, onion and garlic in the pastry case.
  7. Pour over the egg and arrange the cheese on top.
  8. Lightly grind the cumin seed in a pestle and mortar so as to release the oils and sprinkle over the top of the tarte.
  9. Optional, you could grate some Parmesan or Pecorino over the top.
  10. Bake in the oven for 15 mins till the egg is set.
