sig's Chickpea, Blueberry and Tomato Salad
- 2 can best chickpeas rinsed and drained
- 1 large clove of garlic , crushed and mashed into paste with a little salt
- 1/2 large green,orange or red chilli, chopped very finely
- 1/2 red onion chopped finely
- 1 tbsp lemon juice
- 1 tbsp rasberry or red wine vinegar
- 4 tbsp olive oil
- 4 best tomatoes, seeded, cut into bite-size pieces
- 6 white or green tinned asparagus, cut into small pieces tips removed,
- 1 bunch each (small) coriander and mint chopped finely
- 2 good handfuls of blueberries
- put all ingredients together except chickpeas,asparagus,blueberries, tomatoes mint and coriander.
- mix well , now add asparagus, chickpeas, tomatoes, blueberries, mint and coriander, gently mix.Chill slightly before serving.
