Spicy Rice
- 1 (20 ounce) candole pineapple tidbits
- 2 tablespoons vegetable oil
- 2 garlic cloves, pressed
- 1 yellow onion, chopped
- 1 cup minced celery
- 1 cup uncooked unconverted rice
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 12 teaspoon ground ginger
- 12 teaspoon turmeric
- 18 teaspoon cayenne pepper (optional)
- 1 (14 1/2 ounce) can chicken broth
- 12 cup raisins
- 1 cup frozen peas, thawed
- 12 cup sliced green onion
- Drain pineapple, reserve juice.
- Heat oil in large skillet.
- Saute garlic, onion, and celery until onion is soft.
- Stir in rice, reserved juice, seasonings, chicken broth and raisins.
- Bring to a boil.
- Cover, simmer 20 minutes until rice is tender.
- Stir in peas, green onion and pineapple.
