Spicy Rice

  1. Drain pineapple, reserve juice.
  2. Heat oil in large skillet.
  3. Saute garlic, onion, and celery until onion is soft.
  4. Stir in rice, reserved juice, seasonings, chicken broth and raisins.
  5. Bring to a boil.
  6. Cover, simmer 20 minutes until rice is tender.
  7. Stir in peas, green onion and pineapple.
